Blackberry Vanilla Chia Pudding Recipe

An Original Recipe Brought to You

Ingredients:
- 1 cup of chia seeds
- 12 ounces of blackberries (either fresh or frozen work)
- 4 cups soy milk (or plant-based milk of your choice – I use Silk Original soy milk)
- ½ cup maple syrup
- 1 tablespoon vanilla (I use Trader Joe’s Organic Alcohol-Free Pure Vanilla)
Instructions:
- Add the chia seeds to a large mixing bowl. Set aside.
- Rinse the blackberries. Add them to a large blender, along with the soy milk, maple syrup, and vanilla. Blend on high for 10 to 15 seconds, or until thoroughly mixed.
- Pour the liquid mixture through a fine mesh strainer into a separate bowl, to strain out all the blackberry seeds. Discard the seeds.
- Pour the liquid mixture into the large mixing bowl, using a whisk to constantly stir the chia seeds as the liquid is being added to them. It is crucial to continually whisk as the liquid is added to the chia seeds, otherwise the chia seeds will clump up. It is very annoying to break up these little clumps, so avoid the clumping entirely by briskly whisking the mixture. A wooden or metal spoon does NOT work as well as a whisk.
- Cover the bowl and place in the refrigerator. After about a half hour, stir up the mixture. The chia seeds tend to float to the bottom of the bowl at the beginning; therefore as the mixture starts to thicken, you should stir it once or twice so that the chia seeds are more evenly dispersed throughout the pudding.
- Refrigerate overnight (or at least 8 hours for safety). Chia seeds can absorb up to 27 times their weight in water / milk / liquid so it is imperative that you allow them to fully soak. According to medical experts, choking can occur if you don’t allow the chia seeds to fully expand before eating. So make sure that the pudding sets for at least 8 hours.
- Serve chilled, and top with fresh fruit of your choice if desired. (Note: after being refrigerated for 8 hours, there might be some liquid on the top of the pudding so stir it into the pudding to evenly disperse it).
